I'm most excited for all the new furniture! based on the huge amount we've seen, I suspect that most furniture from NL will be returning, especially since most of the requests in HHP seem like the same requests the villagers had in HHD
by far the thing I was bothered by the most about NH up until this point was the lack of furniture and that the furniture we did have mostly felt all very same-y. there wasn't enough variety that I really felt like I could have fun with it. if we get as much furniture out of this update as it seems like we're getting, I might be able to get another ~two years out of this game before I get bored

It drives ME nuts not having more storage space in general. Forget new villagers and even veggies and the trailer park on Harp´s Island... The first thing I will do after the update is to rush to Tom Nook to throw bells in his face until he starts extending

The new furniture, for the most part. With all the stuff from New Leaf coming back, I hope the Sloppy series also makes a return! It was my favourite back then and a carpet already exists in the game so it would make sense. Perhaps it'll be just as hard to get too lol

A lot of stuff, but The Roost is pretty neat, especially when it's remarked (I think) that you could use your Amiibo cards to invite villagers (and possibly NPCs like Isabelle) into The Roost. And since I've bought every single Amiibo available, including the upcoming Series 5, yeah, this is a big, big feature for me.
I'm most excited for cooking, because for some reason I've always loved pretend and virtual food.
But my very close second is being able to decorate villagers' homes. My ACNH best friend is Megan, and she moved in as my first wave of villagers (like the non-starters, but right after the two starters). Because your starters and first wave of villagers have "starter homes," I've always felt really bad when I go from her home (comprised almost entirely of wooden furniture) to, say, Diana's, which is really lush (it even has a hot tub). I haven't decided yet if I'm going to make her new home look like how her home would have looked if she had moved in later, or if I'm going to decorate it in a different way, but I know I'm going to make her home look really nice.
I do plan on buying the DLC. I'd prefer a one-time cost to own it instead of the NSOEP which would be like buying it every single year and then some. I do want the N64 and Genesis games, but not at that price.
