I cannot catch one to save my life. They bite me every time. What do I do?!

You hold A to creep towards it.

When it rears up, you stop moving.

Then continue to creep up once it has calmed down.

If it reads up again then stand still again.

Continue creeping ahaha

When you are close enough quickly release the A button.

That is how I did it.

I don't have scorpions (northern hemisphere, no TTing) but I've had great success with tarantulas using holes.

You can see in this video I took that, despite my uncoordinated efforts (), I was able to catch the tarantula without getting bit. They cannot pass through holes, whereas your net can reach over them.

I have tarantulas too since I'm in northern hemisphere, but they act the same as the scorpions do.

I've been cutting trees, breaking rocks, plucking flowers etc to make them spawn more often on the flatter islands. I catch enough tarantulas to fill my inventory then leave so I quickly got too impatient to do the red light green light method.

So I usually just:
1) A-button sneak until the tarantula rears up
2) ...Keep right on sneaking forward anyway without stopping
3) then immediately release A the instant it starts moving forward.

I get bit occasionally when I mistime it, but since it just dumps me back at island entrance I don't care too much XD
