I became a pesctarian six months ago, and it's going great. I find, though, that it's a huge problem being the only vegetarian in a family of meat-eaters. I cook for myself most of the time using Lida McCartney's Home Cooking, but I need more, faster recipes. So, I thought why not open a discussion about vegetarian/vegan living to share recipes?
These are some great sites I've found for vegetarian recipes:
The Post Punk Kitchen. I only just came across this, so I'm not totally sure how I feel, but I've been told it's great. I think it's all vegan as well.
So, do you guys have recipes, stories about being a vegetarian/vegan, or just wanna say hi? Please do! =)

It's extremely easy if you know how to go about it from a healthy approach. Try making some tofu and see how you like it. Or go at it from a slow approach. I stopped eating red meat a year before becoming a vegetarian, and pork two months before. I still eat sea food, but very occasionally. If you can cook for yourself, check out the links I posted.
Here is another vegetarian journal. I also just made this and it was delicious. The biggest thing is that you need to be willing to experiment.

I want to be vegetarian, but coming from a family of meat-eaters, I don't think I can do that until I move out. However they acknowledge the fact that I want to be vegetarian when I'm older. They let me not eat meat every Monday, when I'm secret participating in Meat-Free Monday. If my parents found out about the campaign, they would have ideas...

that's cool. :3 so when you were born your parents like, didn't give you any meat? awesome.
i want to be a vegetarian too, but when i was little (like, 7) i mentioned it to my mum and she said 'oh my gosh, don't tell me you're turning into a hippie, you MUST eat meat." o.o

Lucky. My dad is a chef, and he loves meat. My mum just likes it, but not obsessively. The only thing I'd really miss would be bacon. I'd be finer without anything else, but whenever I smell bacon, I go crazy until I get some :S not good for a soon-to-be vegetarian. xD

xDD One of my friends is veggie. My other one's... well, as much as they love animals, they wouldn't sacrifice meat for them. But I can't wait till I'm veggie. (: My dad's the kind of person that would sneak meat into my food. *shakes head in dissapointment*

my veggie friend gets alot of "you'll never make it comments" from her other friends. :/ it's pretty... sad... anyways, in cooking the teacher refused to let her sit out (we were making meat fritters) and she threw up by looking at the meat.
it looked pretty feral, though..

When I was doing cooking we had to make powerpoint presentations on a special dietry requirement. And these two girls sitting next to me were doing veganism, and the teacher was talking to them about how veganism was really hard to keep up, and hard to get all the things your body needs. I was getting so annoyed with her. >.>

There's another veggie girl in my class, but she eats fish (she claims fish was never alive, and it's just a name) yeah, she's a dumb prep. She thinks vegan is another word for vegetarian. Gah, I hate her so much.

I hate it when people think vegan is the same as vegetarian. The dumb preppy girls in my class ask such stupid questions about me being vegan:
"But why don't you eat milk? It wasn't alive." "So is vegan where you don't eat meat, yeah? Same as vegetarian" "Is the reason you are so pale because you don't drink milk?" "But won't you die without milk?"

People are so stereotypical these days. "Vegans die early." "Vegetarians are a bunch of PETA weirdos." "Vegans can't eat anything." Oh yeah, Hart Hanson's lovely contribution - "vegans have weaker bones." (that one was directed from him to Emily Deschanel, who is vegan, after she broke her toe).
I really want to go vegan someday. No-one understands why. I can think of a disturbing term for eggs but it's kind of disturbing... email me (see profile) and I'll spill. Milk is cruel, the calves are separated from their mothers far too young; eggs are cruel, male chicks are often killed as they are useless. I hate the animal industries.

Morning Star Farms has awesome veggie bacon. They have all sorts of fake meats that taste just the same as real meat. Same with Quorn, Trader Joe's, and Boca. You can find them in the frozen foods section in really any grocery store.
My thing is, I get frustrated when people push their ideas onto anyone, and I think that's a big turn off for people about vegetarians. PETA has an excellent cause, but they're extreme. Any amount of extremism is unhealthy, hence why I think some people tend to assume that vegetarians and vegans may shove their ideals down your throat. Though I've only met a few out there who were very extreme.
Freerange is fantastic, but expensive. I do all the cooking in my house, and I tell my dad to buy freerange beef and chicken, but it's sometimes just too expensive.
